- 2 pounds Yukon Gold potatoes
- 1 head of garlic
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup grated Swiss cheese
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Roast the garlic by cutting off the top of the head, drizzling it with olive oil, wrapping in foil, and baking for 30-35 minutes.
- In a mixing bowl, combine heavy cream, whole milk, mashed roasted garlic, salt, pepper, thyme, and paprika. Whisk until smooth.
- In a greased baking dish (9×13 inch), layer half of the sliced potatoes and pour half of the cream mixture over them. Sprinkle half of the cheeses on top and repeat.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
- Allow to rest for 10 minutes before garnishing with chopped parsley and serving.
