  • 2 pounds Yukon Gold potatoes
  • 1 head of garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Swiss cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the garlic by cutting off the top of the head, drizzling it with olive oil, wrapping in foil, and baking for 30-35 minutes.
  2. In a mixing bowl, combine heavy cream, whole milk, mashed roasted garlic, salt, pepper, thyme, and paprika. Whisk until smooth.
  3. In a greased baking dish (9×13 inch), layer half of the sliced potatoes and pour half of the cream mixture over them. Sprinkle half of the cheeses on top and repeat.
  4. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
  5. Allow to rest for 10 minutes before garnishing with chopped parsley and serving.
