  • 8 slices of toast
  • 600 grams roast beef
  • Salt and freshly ground pepper
  • 1 tablespoon mustard
  • 4 tablespoons vegetable oil
  • 2 onions
  • 1 handful of lettuce (arugula and spinach)

Instructions

  1. Season roast beef with salt and pepper, then sear in a hot frying pan until golden brown.
  2. Brush the beef with mustard, transfer to a roasting rack, and roast in a preheated oven at 140°C (275°F) for about 30 minutes.
  3. Meanwhile, slice onions and sauté in the same pan until golden brown.
  4. Prepare lettuce by rinsing and chopping it coarsely.
  5. Toast the bread until golden, then layer sliced roast beef, onions, and lettuce between two slices to assemble each sandwich.
