  • 1 cup unsalted butter (room temperature)
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/2 pint fresh raspberries (or 1 cup frozen, thawed)
  • 6 large eggs
  • Juice of 3 lemons
  • 2 1/4 cups granulated sugar (for filling)
  • 6 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9"x13" baking pan and line it with parchment paper.
  2. Prepare the crust by mixing butter, flour, sugar, and salt until smooth. Press into the prepared pan and bake for 15-20 minutes until golden.
  3. For the filling, blend raspberries with water, strain out seeds, then whisk together eggs, sugar, flour, lemon juice, and raspberry puree until smooth.
  4. Pour the filling over the crust and bake for an additional 25-30 minutes until edges are set and lightly browned.
  5. Allow to cool completely before slicing into bars.
