Description

Pear Salad with Balsamic Vinaigrette is a delightful autumn dish that brings together a medley of flavors and textures. This elegant salad features sweet, juicy pears, peppery arugula, tangy cranberries, creamy goat cheese, and crunchy toasted pecans, all drizzled with a homemade balsamic vinaigrette.

  • 3 pears, thinly sliced
  • 5 ounces arugula
  • 1 cup dried cranberries
  • 4 to 5 ounces goat cheese, crumbled
  • ½ cup pecans, toasted
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, grated or minced
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Soak thinly sliced red onion in ice water for 10 minutes to mellow the flavor; drain and pat dry.
  2. In a mason jar, combine balsamic vinaigrette ingredients: olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper. Shake until emulsified.
  3. In a large serving bowl, layer arugula as the base. Top with pears, onions, goat cheese, cranberries, and pecans.
  4. Just before serving, drizzle with vinaigrette and serve without tossing for an attractive presentation.
