- 1 cup dried cranberries
- 4 to 5 ounces goat cheese, crumbled
- ½ cup pecans, toasted
- ⅓ cup extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, grated or minced
- ¼ teaspoon fine sea salt
- ⅛ teaspoon freshly ground black pepper
- ½ small red onion, thinly sliced
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Soak thinly sliced red onion in ice water for 10 minutes to mellow the flavor; drain and pat dry.
- In a mason jar, combine balsamic vinaigrette ingredients: olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper. Shake until emulsified.
- In a large serving bowl, layer arugula as the base. Top with pears, onions, goat cheese, cranberries, and pecans.
