  • 6 chicken thighs (skinless and bone-in)
  • 2 tablespoons olive oil (divided)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 1/2 cups uncooked long-grain rice
  • 1 1/2 cups vegetable or chicken stock (hot)
  • Seasonings: salt, black pepper, smoked paprika, dried thyme, dried oregano, garlic granules
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a mixing bowl, whisk together olive oil, salt, pepper, smoked paprika, thyme, oregano, and garlic granules. Coat chicken thighs evenly in the mixture.
  3. In an 8×12-inch baking dish, combine diced onion and minced garlic with remaining olive oil and hot stock.
  4. Stir in uncooked rice along with salt and pepper.
  5. Place seasoned chicken thighs on top of the rice mixture.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove foil and bake uncovered for another 30 minutes until chicken is cooked through.
  8. Let rest for 10 minutes before serving; garnish with fresh parsley.
