Ingredients
- 4 large sweet onions (Vidalia or Walla Walla)
- 4 cups vegetable or chicken broth
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- Fresh thyme leaves and parsley for garnish
Instructions
- Peel and trim the onions; leave them whole or quarter them.
- In a large pot, combine broth ingredients: broth, salt, pepper, garlic powder, onion powder, smoked paprika, and olive oil. Bring to a boil over medium-high heat.
- Add the prepared onions to the boiling broth. Reduce heat to low and cover; simmer for 30-40 minutes until tender.
- Stir in fresh thyme during the last 5 minutes of cooking.
- Serve on a platter with broth drizzled over and garnish with parsley.
