  • 4 large sweet onions (Vidalia or Walla Walla)
  • 4 cups vegetable or chicken broth
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Fresh thyme leaves and parsley for garnish

Instructions

  1. Peel and trim the onions; leave them whole or quarter them.
  2. In a large pot, combine broth ingredients: broth, salt, pepper, garlic powder, onion powder, smoked paprika, and olive oil. Bring to a boil over medium-high heat.
  3. Add the prepared onions to the boiling broth. Reduce heat to low and cover; simmer for 30-40 minutes until tender.
  4. Stir in fresh thyme during the last 5 minutes of cooking.
  5. Serve on a platter with broth drizzled over and garnish with parsley.
