Ingredients
- 8 ounces rotini pasta
- 1 pound ground beef
- 1 onion, finely chopped
- 2 teaspoons minced garlic
- 1 large green bell pepper, finely chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 2 cups beef broth
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, bring beef broth to a boil. Add rotini pasta and cook until al dente. Drain and set aside.
- In the same pot over medium heat, cook ground beef with salt and pepper until browned. Drain excess grease if needed.
- Add onion and bell pepper; sauté for 3-5 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Mix in cooked pasta, black beans, diced tomatoes (with juice), corn, and taco seasoning; stir well.
- Allow to simmer for about 5 minutes for flavors to meld.
