  • 8 ounces rotini pasta
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 large green bell pepper, finely chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, bring beef broth to a boil. Add rotini pasta and cook until al dente. Drain and set aside.
  2. In the same pot over medium heat, cook ground beef with salt and pepper until browned. Drain excess grease if needed.
  3. Add onion and bell pepper; sauté for 3-5 minutes until softened. Stir in garlic and cook for another 30 seconds.
  4. Mix in cooked pasta, black beans, diced tomatoes (with juice), corn, and taco seasoning; stir well.
  5. Allow to simmer for about 5 minutes for flavors to meld.
  6. Stir in shredded cheddar cheese until melted and creamy. Serve hot.
