  • 46 tablespoons butter or vegan butter
  • 1 cup shredded carrots
  • 2 cups long-grain white rice (Lundberg White Jasmine recommended)
  • 8 cups chicken stock
  • 2 chicken breasts (about 1 lb), cut into bite-sized pieces
  • Seasoned salt and pepper to taste

Instructions

  1. Melt butter in a large soup pot over medium heat. Add carrots, season with salt and pepper, cover, and cook for 5-6 minutes until tender.
  2. Stir in rice, dried onion, garlic, and parsley. Sauté for 1 minute.
  3. Add chicken stock; bring to a boil while stirring occasionally.
  4. Reduce heat to medium-low, cover, and simmer for 15 minutes.
  5. Add seasoned chicken pieces; continue simmering for another 7-10 minutes until chicken is fully cooked.
  6. Stir in remaining butter if desired; let sit for 5 minutes before serving.
