- 4–6 tablespoons butter or vegan butter
- 1 cup shredded carrots
- 2 cups long-grain white rice (Lundberg White Jasmine recommended)
- 8 cups chicken stock
- 2 chicken breasts (about 1 lb), cut into bite-sized pieces
- Seasoned salt and pepper to taste
Instructions
- Melt butter in a large soup pot over medium heat. Add carrots, season with salt and pepper, cover, and cook for 5-6 minutes until tender.
- Stir in rice, dried onion, garlic, and parsley. Sauté for 1 minute.
- Add chicken stock; bring to a boil while stirring occasionally.
