  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • ¼ cup freshly grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, warm the olive oil. Sauté the chopped onion until translucent (3-4 minutes) and then add minced garlic for another 30 seconds.
  2. Add shrimp to the skillet; season with salt, pepper, and oregano. Cook until pink and opaque (2-3 minutes). Remove shrimp from skillet.
  3. In the same skillet, add orzo and chicken broth. Simmer for about 10-12 minutes until orzo is tender.
  4. Stir in lemon zest, lemon juice, and fresh spinach. Once wilted, return shrimp to the pan; mix well.
  5. Top with grated Parmesan cheese and garnish with parsley before serving.
