  • 1 pound smoked sausage (kielbasa or Italian)
  • 4 medium potatoes, diced
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prep the ingredients by washing and dicing the potatoes and chopping the peppers and onion.
  2. Heat olive oil in a large skillet over medium heat. Cook sausage slices until browned (5-7 minutes). Remove from skillet.
  3. In the same skillet, add diced potatoes, onion, and bell peppers; season with salt, pepper, paprika, and oregano. Sauté for 10-15 minutes until potatoes are tender.
  4. Stir in minced garlic and return sausage to the skillet. Cook for another 2-3 minutes until heated through.
