  • 2 pounds beef chuck
  • 1 large onion
  • 3 cloves garlic
  • 2 cups carrots
  • 2 cups potatoes
  • 1 cup celery
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour

Instructions

  1. Season beef cubes with salt and pepper. Heat vegetable oil in a large pot over medium-high heat and brown the beef on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion until softened (about 5 minutes). Add minced garlic and cook for one more minute.
  3. Return the beef to the pot along with carrots, potatoes, celery, beef broth, tomato paste, thyme, rosemary, bay leaves, and Worcestershire sauce. Bring to a boil.
  4. Reduce heat to low and cover; simmer for 1.5 to 2 hours until beef is tender.
  5. For thicker stew, mix flour with cold water to create a slurry; stir into the stew and cook for additional 10 minutes.
  6. Discard bay leaves before serving.
