Description

Mushroom Pepper Chicken is a quick and flavorful dish that combines tender chicken breast with earthy mushrooms and vibrant bell peppers. Cooked in a rich garlic sauce, this one-pan meal is perfect for busy weeknights or special occasions.

  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh mushrooms
  • 1 large green bell pepper
  • 1 large red bell pepper
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • ¼ cup chicken broth
  • 2 tablespoons soy sauce
  • Fresh parsley for garnish

Instructions

  1. Season chicken strips with salt and black pepper in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, add sliced mushrooms and bell peppers; sauté for about 5 minutes. Stir in garlic and thyme, cooking for another minute.
  4. Return chicken to the skillet, pour in chicken broth and soy sauce, mixing well. Simmer for 3-4 minutes until the sauce thickens.
  5. Transfer to a serving dish, garnish with parsley, and serve warm.
