- 8 ounces fresh mushrooms
- 1 large green bell pepper
- 1 large red bell pepper
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- ¼ cup chicken broth
- 2 tablespoons soy sauce
- Fresh parsley for garnish
Instructions
- Season chicken strips with salt and black pepper in a bowl.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned (5-7 minutes). Remove and set aside.
- In the same skillet, add sliced mushrooms and bell peppers; sauté for about 5 minutes. Stir in garlic and thyme, cooking for another minute.
- Return chicken to the skillet, pour in chicken broth and soy sauce, mixing well. Simmer for 3-4 minutes until the sauce thickens.
- Transfer to a serving dish, garnish with parsley, and serve warm.
