  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon vodka
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (or whipped topping)
  • 1 cup fresh lemon juice (about 46 lemons)
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • ½ cup water
  • 2 large egg yolks
  • 1 tablespoon unsalted butter
  • Whipped cream for topping
  • Lemon slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch square baking dish to form an even layer. Bake for 8-10 minutes or until lightly golden. Remove from oven and let cool completely.
  2. In a large mixing bowl, beat the cream cheese until smooth. Gradually add in powdered sugar, vodka, and vanilla extract, mixing until creamy. Gently fold in whipped cream until fully incorporated. Spread the filling evenly over the cooled crust. Refrigerate while preparing the lemon layer.
  3. In a saucepan over medium heat, combine lemon juice, granulated sugar, cornstarch, and water. Whisk until smooth; heat until bubbling. In a small bowl, whisk egg yolks; temper them with some hot lemon mixture. Gradually whisk tempered egg mixture back into saucepan. Stir continuously until thickened (about 2-3 minutes). Remove from heat; stir in butter until melted. Let cool slightly before pouring it over the cream cheese layer.
  4. Once you pour on the lemon layer, refrigerate the dessert for at least 4 hours or until set.
  5. Cut into squares and serve topped with whipped cream and a slice of lemon for garnish.
