Ingredients

  • 3/4 cup unsalted butter
  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 8 oz cream cheese
  • 1/4 cup sugar (for frosting)
  • Assorted fresh fruit (for topping)

Instructions

  1. In a stand mixer, beat together softened butter and sugar until creamy. Add egg, yolk, and vanilla; mix until smooth.
  2. In another bowl, sift flour, salt, and baking powder. Gradually add the dry mix to the wet mixture until just combined.
  3. Wrap dough in plastic wrap and refrigerate for at least one hour.
  4. Preheat oven to 350°F (175°C). Roll out chilled dough to about 1/2 inch thick. Cut into shapes with cookie cutters.
  5. Bake on a lined baking sheet for 9-10 minutes until set and lightly golden.
  6. For the frosting, mix cream cheese, sugar, and vanilla until smooth.
  7. Once cooled, spread frosting on each cookie and top with assorted fresh fruits.
