Ingredients
- 1 pound ground chicken
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried mint
- ½ teaspoon paprika
- 1 large egg
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Zest of 1 lemon
- Olive oil for frying
Instructions
- In a mixing bowl, combine ground chicken, salt, pepper, onion powder, garlic powder, oregano, mint, paprika, egg, breadcrumbs, Parmesan cheese, parsley, and lemon zest. Mix until just combined.
- Preheat the oven to 400°F (200°C). Shape the mixture into small meatballs (about 1-inch in diameter) and place on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides for about 5-7 minutes before transferring them back to the baking sheet.
- Bake in the preheated oven for 10-15 minutes until cooked through and no longer pink inside.
