Ingredients

  • 2 ripe mangoes, diced
  • 1 avocado, diced
  • ½ small red onion, finely sliced
  • 1 small cucumber, sliced
  • 1 cup coriander leaves, chopped
  • ¼ cup crushed peanuts
  • 3 tbsp sweet chilli sauce
  • Juice of 2 limes
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • ½ tsp freshly grated ginger
  • Sea salt flakes, to taste
  • Cracked black pepper, to taste

Instructions

  1. To make the dressing, whisk together sweet chilli sauce, lime juice, olive oil, honey (or maple syrup), grated ginger, salt, and pepper in a small bowl until well combined.
  2. In a serving bowl, layer the salad starting with diced mangoes followed by cucumber slices and diced avocado. Add red onion slices on top and finish with chopped coriander leaves.
  3. Drizzle the dressing over the salad and sprinkle with crushed peanuts. Toss gently before serving to combine while maintaining some layers for presentation.
