  • 1 pound ground beef
  • 1 can black beans (15 ounces)
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and prick them with a fork. Coat with olive oil, salt, and pepper. Bake for 45-60 minutes until tender.
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat and stir in taco seasoning.
  3. Mix black beans, corn, diced tomatoes in a bowl; season to taste.
  4. Once potatoes are baked and cooled slightly, fluff interiors and layer with ground beef mixture followed by bean mixture.
