- 4 medium sweet potatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 ripe avocado, diced
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake on a lined baking sheet for 45-60 minutes until tender.
- In a mixing bowl, combine black beans, corn, garlic powder, cumin, salt, and pepper.
- In a small bowl, mix Greek yogurt with lime juice; season to taste.
