  • 4 medium sweet potatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 ripe avocado, diced
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake on a lined baking sheet for 45-60 minutes until tender.
  3. In a mixing bowl, combine black beans, corn, garlic powder, cumin, salt, and pepper.
  4. In a small bowl, mix Greek yogurt with lime juice; season to taste.
  5. Once sweet potatoes are done, cut them lengthwise and mash the insides slightly. Fill each potato with the bean mixture and top with cheese.
  6. Return to the oven for 5-10 minutes until cheese melts.
  7. Serve topped with diced avocado, lime crema, and cilantro.
