- 4 large russet potatoes
- 1 pound sirloin steak, cut into bite-sized pieces
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- ½ cup sour cream
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat your oven to 400°F (200°C). Scrub the russet potatoes and poke holes in them with a fork. Rub with olive oil and salt. Bake directly on the oven rack for 45-60 minutes until tender.
- In a skillet over medium-high heat, season the steak bites with salt, pepper, garlic powder, and onion powder. Add olive oil and cook for about 3-5 minutes until browned.
- Once the potatoes are baked, slice them open and fluff the insides with a fork. Top with cheddar cheese, crumbled bacon, and sour cream.
- Add cooked steak bites on top and garnish with chives before serving.
