  • 9 lasagna noodles
  • 15 ounces ricotta cheese
  • 1 ½ cups fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese

Instructions

  1. Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain and set aside to cool.
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, ½ cup Parmesan, salt, and pepper. Mix well.
  3. Preheat the oven to 375°F (190°C). Spread 1 cup of marinara sauce in a baking dish.
  4. Spread about 2-3 tablespoons of filling on each noodle and roll tightly. Place seam-side down in the dish.
  5. Pour remaining marinara sauce over the roll-ups and sprinkle with mozzarella and remaining Parmesan.
  6. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until bubbly.
