  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup uncooked pasta (like ditalini)
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery for about 5-7 minutes until tender. Stir in oregano, basil, and red pepper flakes; cook for an additional minute.
  3. Add undrained diced tomatoes and broth; bring to a boil then simmer.
  4. Stir in uncooked pasta; cook according to package instructions until al dente.
  5. Return cooked sausage to the pot along with fresh spinach; cook until wilted. Season with salt and pepper.
