  • 1 teaspoon chili powder

  • 2 cups cooked brown rice or quinoa
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup sweet corn kernels (canned or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 cup grape tomatoes, halved
  • ½ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Whisk honey, lime juice, cumin, chili powder, salt, and pepper in a mixing bowl. Add chicken breasts and coat well; marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side until the internal temperature reaches 165°F. Let rest before slicing.
  3. In serving bowls, layer cooked brown rice or quinoa as the base. Add black beans, corn, diced bell pepper, avocado, and grape tomatoes.
