Ingredients
- 1 ¾ cups white whole wheat flour
- ½ cup honey or maple syrup
- ⅓ cup melted coconut oil
- 2 eggs (or vegan substitutes)
- 1 ½ cups grated zucchini (squeezed of excess moisture)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon fine-grain sea salt
Instructions
- Preheat oven to 325°F (163°C). Grease a 9” x 5” loaf pan.
- In a large bowl, whisk together melted coconut oil and honey. Add eggs and mix until smooth.
- Stir in milk, baking soda, cinnamon, vanilla extract, and salt.
- Fold in the grated zucchini and flour until just combined.
- Pour the batter into the prepared pan and sprinkle with extra cinnamon if desired.
