  • 4 boneless skinless chicken breasts
  • 4 medium-sized jalapeños
  • 8 slices of bacon
  • 4 ounces cream cheese
  • 1 cup shredded medium cheddar cheese
  • BBQ sauce for basting
  • 2 tablespoons coconut sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your grill to medium heat (350℉ – 375℉).
  2. In a small bowl, mix coconut sugar, garlic powder, onion powder, oregano, chili powder, salt, and pepper to create the rub.
  3. In a separate bowl, combine cream cheese with 2 tablespoons of the rub and cheddar cheese.
  4. Prepare the jalapeños by halving them and removing seeds.
  5. Slice each chicken breast open lengthwise and pound to an even thickness.
  6. Stuff each breast with half a jalapeño and cream cheese mixture; close and wrap with bacon.
  7. Grill each piece for about 6 minutes per side until cooked through and bacon is crispy.
