  • 8 ounces orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the orzo in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper until well blended.
  4. Add the cooled orzo to the vegetable mixture. Pour the dressing over and toss gently to coat. Fold in feta cheese and parsley.
  5. Serve immediately or chill in the refrigerator for at least 30 minutes to enhance flavors.
