  • 1 cup semi-sweet chocolate chips (for ganache)
  • ½ cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a jelly roll pan (15×10 inches) with parchment paper.
  2. In a mixing bowl, whisk eggs and sugar until fluffy; stir in vanilla.
  3. Sift together cocoa powder, gluten-free flour, baking powder, and salt; fold into egg mixture until just combined.
  4. Pour batter into prepared pan and bake for 12–15 minutes or until springy.
  5. Dust a clean towel with powdered sugar, invert the cake onto it, and roll tightly while warm; cool completely.
  6. Whip cream for filling until soft peaks form; gradually add powdered sugar and cocoa until stiff peaks form.
  7. Unroll cooled cake, spread the filling evenly, re-roll without the towel, and place seam-side down.
  8. Heat cream for ganache until hot but not boiling; stir in chocolate chips until melted and smooth. Cool slightly before drizzling over the log.
