Instructions
- Preheat oven to 350°F (175°C). Grease and line a jelly roll pan (15×10 inches) with parchment paper.
- In a mixing bowl, whisk eggs and sugar until fluffy; stir in vanilla.
- Sift together cocoa powder, gluten-free flour, baking powder, and salt; fold into egg mixture until just combined.
- Pour batter into prepared pan and bake for 12–15 minutes or until springy.

- Unroll cooled cake, spread the filling evenly, re-roll without the towel, and place seam-side down.
- Heat cream for ganache until hot but not boiling; stir in chocolate chips until melted and smooth. Cool slightly before drizzling over the log.
