  • 8 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, chopped

Instructions

  1. Cook the linguine in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then cook for 2-3 minutes on each side until pink. Remove from skillet.
  3. In the same skillet, reduce heat to medium and sauté garlic for 30 seconds. Add cherry tomatoes and cook until softened.
  4. Stir in chicken broth and lemon juice; simmer for one minute before adding butter until melted.
  5. Return shrimp to the skillet along with the cooked linguine; toss to combine and heat through.
  6. Serve garnished with fresh parsley.
