  • 4 tablespoons unsalted butter, softened
  • 6 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, quartered

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry and place it in a roasting pan.
  3. In a mixing bowl, combine softened butter, minced garlic, grated Parmesan, salt, black pepper, oregano, and thyme.
  4. Gently separate the skin from the chicken breast and thighs; spread half of the mixture under the skin and rub the rest on the outside.
  5. Squeeze lemon wedges over the chicken and stuff them inside for added flavor.
  6. Roast for about 1 hour or until the internal temperature reaches 165°F (75°C), basting halfway through.
