  • 4 tablespoons olive oil

  • 1 teaspoon ground black pepper

  • 2 tablespoons fresh lemon juice
  • 2 pounds baby potatoes, halved

Instructions

  1. Marinate the chicken: In a mixing bowl, combine minced garlic, olive oil, oregano, salt, pepper, and lemon juice. Coat the chicken thighs in the marinade and refrigerate for at least 30 minutes.

  3. On a baking sheet, place marinated chicken skin-side up and arrange seasoned potatoes around them. Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
