  • 2 pounds russet potatoes, peeled and diced

  • 1/2 teaspoon ground black pepper
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large pot, cover diced potatoes with cold water and bring to a boil. Simmer for 15-20 minutes until tender. Drain well.
  2. Meanwhile, melt 2 tablespoons of butter in a small skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant; set aside.
  3. Return drained potatoes to the pot. Add remaining butter, heavy cream, whole milk, salt, and pepper. Mash until creamy.
  4. Stir in sautéed garlic and fresh herbs until evenly combined. Adjust seasoning as needed.
