Ingredients
- 1 cup heavy cream
- 1 cup unsweetened almond milk (or hemp milk)
- 1/3 cup Swerve Sweetener
- 1 tbsp allulose
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 tsp xanthan gum
Instructions
- In a medium saucepan over medium-high heat, whisk together the heavy cream, almond milk, Swerve sweetener, and cocoa powder until boiling.
- Remove from heat and stir in vanilla extract and sprinkle xanthan gum while whisking until fully combined. Allow to cool for at least 10 minutes.
- Pour the cooled mixture into popsicle molds and freeze for about 1 hour.
- Insert sticks two-thirds of the way into each popsicle and return them to the freezer until completely solid (at least 5 hours).
- To unmold, run warm water over the outside of the mold for about 5-10 seconds and gently tug on the stick.
