  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. For the cookie crust, mix flour, cornstarch, baking powder, and salt in one bowl. In another bowl, cream together softened butter and sugar. Add egg and vanilla; mix until combined. Gradually add dry ingredients while mixing until fully incorporated. Chill the dough for at least 20 minutes.
  2. Preheat oven to 350°F (177°C). Grease a pizza pan and press chilled dough into the pan. Bake for 17–19 minutes until lightly browned; cool completely.
  3. For frosting, beat together cream cheese and butter until smooth, then gradually add confectioners’ sugar and vanilla.
  4. Spread frosting over cooled crust and top with fresh fruit before slicing.
