  • 2 large onions, thinly sliced

  • 1 teaspoon black pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 4 cups beef broth
  • 1 cup dry red wine (or additional beef broth)
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 4 slices French bread, toasted
  • 1 cup Gruyère cheese, shredded
  • Fresh parsley, for garnish

Instructions

  1. Season the short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat, then sear the short ribs until browned on all sides. Remove and set aside.
  2. In the same pot, add sliced onions and cook over medium heat, stirring occasionally until caramelized (about 20-25 minutes). Add minced garlic and thyme; cook for another minute.
  3. Deglaze with red wine, scraping the bottom of the pot to release browned bits. Let simmer for 5 minutes, then return short ribs along with beef broth, Worcestershire sauce, and bay leaf. Bring to a boil, reduce heat to low, cover, and simmer for 2-3 hours until tender.
  4. Shred the meat from the bones and return it to the pot. Adjust seasoning if necessary.
  5. Serve hot in bowls topped with toasted French bread and Gruyère cheese under the broiler until bubbly. Garnish with fresh parsley.
