- 1/2 cup butter (room temperature)
- 2 cups granulated sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 1/4 cups milk
- 2 3/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 ounces red gelatin powder (Cherry or Strawberry)
- 3 ounces blue gelatin powder (Berry)
- For frosting: 1 cup butter, 5 cups confectioners' sugar, red and blue icing gel
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, cream together room temperature butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- In another bowl, combine flour, baking powder, and salt. Gradually mix half into the butter mixture along with half of the milk. Repeat with remaining ingredients until smooth.
- Divide the batter into three bowls. Mix red gelatin in one bowl, blue gelatin in another; leave the last bowl plain.
- Layer the batters in cupcake liners starting with red, then white, followed by blue.
- Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
