Description

Ingredients

  • 1/2 cup butter (room temperature)
  • 2 cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces red gelatin powder (Cherry or Strawberry)
  • 3 ounces blue gelatin powder (Berry)
  • For frosting: 1 cup butter, 5 cups confectioners' sugar, red and blue icing gel

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together room temperature butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. In another bowl, combine flour, baking powder, and salt. Gradually mix half into the butter mixture along with half of the milk. Repeat with remaining ingredients until smooth.
  4. Divide the batter into three bowls. Mix red gelatin in one bowl, blue gelatin in another; leave the last bowl plain.
  5. Layer the batters in cupcake liners starting with red, then white, followed by blue.
  6. Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
