  • 4 large eggs
  • ½ cup unsalted butter, cut into pieces
  • Zest of 2 lemons

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine 1 cup flour, ½ cup chilled butter, ¼ cup powdered sugar, and ¼ teaspoon salt; pulse until crumbly.
  3. Add 1 egg yolk and 2 tablespoons cold water; pulse until dough forms.
  4. Chill dough for 30 minutes, then roll out and cut into circles for mini tartlet pans.
  5. Bake the shells for 12-15 minutes until golden; let cool completely.
  6. For the lemon curd, cook together 1 cup lemon juice, 1 cup sugar, 4 eggs, and ½ cup butter over medium heat until thickened. Stir in zest.
  7. Fill cooled tartlet shells with lemon curd and refrigerate for at least an hour before serving.
