Description

Dill Pickle Soup is a comforting and unique dish that blends the tangy flavor of dill pickles with a creamy base, making it an ideal choice for cozy dinners or quick meals.


Ingredients

  • 2 tablespoons butter or oil
  • 1 yellow onion, finely diced
  • 1 carrot, finely diced
  • 1 celery rib, finely diced
  • 4 dill pickles (200g), finely diced
  • ½ cup pickle juice (120ml)
  • 3 yellow potatoes (400g), peeled and cubed
  • 5 cups vegetable broth
  • 1 cup sour cream (250ml)
  • ½ cup fresh dill, chopped

Instructions

  1. In a large pot over medium-high heat, sauté onions, carrots, and celery in butter or oil until translucent.
  2. Add pickles, pickle juice, potatoes, and vegetable broth; season to taste.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  4. Mix sour cream with flour in a bowl; add some hot soup to temper it before combining back into the pot.
  5. Stir in fresh dill just before serving.
