- 4 dill pickles (200g), finely diced
- ½ cup pickle juice (120ml)
- 3 yellow potatoes (400g), peeled and cubed
- 5 cups vegetable broth
- 1 cup sour cream (250ml)
- ½ cup fresh dill, chopped
Instructions
- In a large pot over medium-high heat, sauté onions, carrots, and celery in butter or oil until translucent.
- Add pickles, pickle juice, potatoes, and vegetable broth; season to taste.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
- Mix sour cream with flour in a bowl; add some hot soup to temper it before combining back into the pot.
- Stir in fresh dill just before serving.
