  • 1 teaspoon onion powder
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)

Instructions

  1. If using fresh potatoes, peel and cut into chunks. Boil until tender, then drain and mash until smooth. Let cool.
  2. In a large bowl, combine ground chicken with garlic powder, onion powder, salt, and pepper.
  3. Add cooled mashed potatoes to the chicken mixture; stir until well combined.
  4. Shape into doughnut forms (about 2 inches wide).
  5. Set up a breading station: coat each doughnut in flour, dip in beaten eggs, then coat in breadcrumbs.
  6. Heat vegetable oil in a deep skillet to about 350°F (175°C). Fry doughnuts for 3-4 minutes on each side until golden brown.
