  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound gnocchi
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for another 30 seconds.
  2. Add diced tomatoes and vegetable broth; bring to a simmer. Season with basil, oregano, salt, and pepper.
  3. Stir in gnocchi and cook as per package instructions (about 2–3 minutes) until they float.
  4. Reduce heat; mix in heavy cream and chopped spinach. Simmer for another 2–3 minutes until spinach wilts.
  5. Remove from heat and stir in Parmesan cheese until melted. Adjust seasoning if needed.
