  • 4 large russet potatoes
  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the russet potatoes and poke holes into each potato with a fork. Rub with olive oil and sea salt. Bake directly on the oven rack for 45-60 minutes until tender.
  2. In a slow cooker, add chicken breasts seasoned with ranch mix. Cook on low for 6-8 hours or high for 3-4 hours until shredded.
  3. Shred the chicken in the slow cooker and mix in cream cheese, crumbled bacon, and half of the cheddar cheese until creamy.
  4. Cool baked potatoes slightly before slicing in half lengthwise and scooping out some flesh. Fill each potato half generously with the chicken mixture.
  5. Top with remaining cheddar cheese and return to the oven for an additional 10-15 minutes until melted and bubbly.
