  • 1 lb chicken breasts
  • 2 eggs
  • 4 cups mixed lettuce
  • 2 small heirloom tomatoes, sliced
  • 1 ripe avocado, sliced
  • 1/3 cup blue cheese, crumbled
  • For the vinaigrette: red wine vinegar, olive oil, garlic, parsley, honey

Instructions

  1. Prepare the vinaigrette by whisking together red wine vinegar, olive oil, minced garlic, chopped parsley, honey, salt, and pepper in a jar.
  2. Marinate the chicken in half the vinaigrette for at least 30 minutes.
