Instructions

  1. Season the beef chuck roast generously with salt and black pepper.

  3. In the same pot, sauté chopped onion until softened (about 3-4 minutes), then stir in minced garlic for an additional 30 seconds.
  4. Return the seared roast to the pot and add beef broth, Worcestershire sauce, carrots, potatoes, celery, rosemary, thyme, and bay leaves.
  5. Bring to a gentle simmer; cover and reduce heat to low. Cook for about 3-4 hours until the beef is fork-tender.
