  • 2 large hard-boiled eggs, chopped
  • ¼ cup fresh parsley, finely chopped (optional)

Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  3. Add the cooled macaroni to the bowl along with chopped celery, bell pepper, red onion, sweet pickle relish, and hard-boiled eggs. Mix gently until combined.
  4. Cover and refrigerate for at least one hour to let the flavors meld together. Just before serving, fold in fresh parsley if desired.
