Ingredients

Scale
  • 2 cups powdered sugar
  • 1 cup almond flour
  • 4 large egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • For decoration: cocoa powder, candy eyes, red candy noses, chocolate sprinkles
  • For ganache filling: 1 cup heavy cream, 8 ounces semi-sweet chocolate

Instructions

  1. Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Sift powdered sugar and almond flour together in a bowl.
  3. In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar until stiff peaks form; mix in vanilla.
  4. Gently fold the dry ingredients into the egg mixture until combined.
  5. Transfer batter to a piping bag and pipe small circles on parchment-lined sheets.
  6. Let them rest for 30-60 minutes until a skin forms.
  7. Bake for 15-18 minutes or until shiny and risen; cool completely before removing from parchment.
  8. Heat heavy cream and pour over chopped chocolate; stir until smooth to make ganache.
  9. Pair macarons by size, pipe ganache on one side, then sandwich with another macaron.
  10. Decorate with melted chocolate to attach eyes, noses, and sprinkles for antlers.
