  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup vegetable oil for frying
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup onion, chopped
  • 2 teaspoons minced garlic
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water for thickening
  • Sesame seeds for garnish
  • Green onions, sliced for garnish

Instructions

  1. Season chicken pieces with salt and pepper. Dredge in flour and cornstarch mixture.
  2. Heat oil in a large skillet over medium-high heat. Fry chicken until golden brown (5-7 minutes). Drain on paper towels.
  3. Sauté chopped bell peppers, onion, and garlic in the same skillet until tender (3-4 minutes).
  4. Whisk together sugar, vinegar, ketchup, and soy sauce; pour into the skillet and simmer.
  5. Stir in cornstarch-water mixture until sauce thickens (1-2 minutes).
  6. Add fried chicken and pineapple; toss to coat and heat through (2 minutes).
  7. Serve garnished with sesame seeds and green onions.
