- 1 medium onion (diced)
- 14.5 oz canned diced tomatoes (undrained)
- ½ cup water
- 2 tbsp taco seasoning
- 16 oz elbow macaroni
- 2 cups shredded cheddar cheese (divided)
Instructions
- Boil the elbow macaroni according to package directions until al dente; drain and set aside.
- In a large skillet over medium heat, brown the ground beef with diced onions for about 5–7 minutes; drain excess fat.
- Add diced tomatoes, water, and taco seasoning to the skillet; stir well and let simmer for about 5 minutes.
- Mix in the cooked macaroni until evenly combined.
- Layer half of the mixture in a greased 13×9 inch baking dish; sprinkle with one cup of cheese. Top with remaining mixture.
- Cover with foil and bake at 350°F (175°C) for 30 minutes. Remove foil, add remaining cheese, and bake uncovered for another 10 minutes until bubbly.
