  • 4 bone-in, skin-on chicken thighs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • Fresh thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat; sear chicken skin-side down until golden brown (6-7 minutes). Flip and cook for another 5-6 minutes. Remove from skillet.
  3. In the same skillet, sauté onion until softened (3-4 minutes), then add garlic for another 30 seconds.
  4. Pour in heavy cream, whisk in mustards and thyme; simmer gently.
  5. Return chicken to skillet, spoon sauce over it, cover, and simmer until chicken reaches an internal temperature of 165°F (75°C), about 15-20 minutes.
  6. Garnish with parsley before serving.
