  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups cooked jasmine rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • ½ cup parsley, chopped
  • ½ cup toasted almonds, sliced
  • Juice of 1 lemon
  • 2 tablespoons tahini
  • 2 tablespoons yogurt (optional)

Instructions

  1. Marinate chicken thighs in spices and olive oil for at least 30 minutes.
  2. Cook the marinated chicken in a preheated grill or skillet until fully cooked (6-7 minutes per side).
  3. Prepare jasmine rice according to package instructions and let cool.
  4. In a bowl, combine diced cucumber, halved cherry tomatoes, chopped red onion, and parsley.
  5. Whisk together lemon juice and tahini for the dressing; season as desired.
