- 1 bay leaf

- 8 ounces egg noodles
- 2 cups fresh spinach (optional)

- In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and set aside to cool.
- In the same pot, add onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
- Pour in chicken broth along with thyme, parsley, salt, and pepper. Bring to a boil.
- While the broth heats up, shred the cooked chicken into bite-sized pieces.
- Once boiling, add egg noodles and shredded chicken back into the pot. Reduce heat to simmer for about 8-10 minutes until noodles are tender.
