  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and set aside to cool.
  2. In the same pot, add onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth along with thyme, parsley, salt, and pepper. Bring to a boil.
  4. While the broth heats up, shred the cooked chicken into bite-sized pieces.
  5. Once boiling, add egg noodles and shredded chicken back into the pot. Reduce heat to simmer for about 8-10 minutes until noodles are tender.
  6. If desired, stir in fresh spinach and cook until wilted (1-2 minutes).
  7. Remove bay leaf before serving; ladle soup into bowls.
