- 2 large eggs, beaten
- 2 cups panko breadcrumbs

- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon garam masala
- 2 cups chicken broth
- 1 medium carrot, sliced
- 2 medium potatoes, peeled and diced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- Steamed rice, for serving
- Chopped green onions, for garnish
Instructions
- Season chicken breasts with salt and pepper. Dredge in flour, dip in eggs, then coat with panko breadcrumbs.
- Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown on both sides (4-5 minutes per side). Drain on paper towels.
- In a saucepan, heat oil and sauté onion until softened. Add garlic, curry powder, and garam masala; cook until fragrant.
- Pour in chicken broth and add sliced carrot and diced potatoes. Simmer until vegetables are tender (about 15 minutes).
- Stir in soy sauce and honey; simmer for an additional 5 minutes.
- Slice fried chicken and serve over steamed rice topped with curry sauce and garnished with green onions.
