  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • Vegetable oil for frying
  • 2 tablespoons vegetable oil (for curry)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • 2 cups chicken broth
  • 1 medium carrot, sliced
  • 2 medium potatoes, peeled and diced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Steamed rice, for serving
  • Chopped green onions, for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Dredge in flour, dip in eggs, then coat with panko breadcrumbs.
  2. Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown on both sides (4-5 minutes per side). Drain on paper towels.
  3. In a saucepan, heat oil and sauté onion until softened. Add garlic, curry powder, and garam masala; cook until fragrant.
  4. Pour in chicken broth and add sliced carrot and diced potatoes. Simmer until vegetables are tender (about 15 minutes).
  5. Stir in soy sauce and honey; simmer for an additional 5 minutes.
  6. Slice fried chicken and serve over steamed rice topped with curry sauce and garnished with green onions.
