  • 2 cups shredded cooked chicken
  • 8 corn tortillas
  • 1 cup enchilada sauce (red or green)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup diced onion
  • Olive oil (for frying)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken with half the enchilada sauce, cumin, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Lightly fry corn tortillas for about 10-15 seconds per side until soft.
  4. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture and sprinkle with cheese. Roll up tightly and place seam-side down in the dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with leftover cheese and diced onion.
  6. Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until golden.
